2 cups almonds (I soak them overnight) or 2 cups Bob’s Red Mill almond flour
1 cup Bob’s Red Mill organic quinoa flour
1 c. sesame seeds
2 teaspoons salt
1 teaspoons xanthum gum
1/4 teaspoons cayenne (optional)
4 tablespoons coconut oil or olive oil
3 egg whites
1/2- 1 cup water
Put almonds in the cuisinart or food processer and process until they are finely ground. (You can skip this step if you are using almond flour.
Add quinoa flour, sesame seeds, salt, cayenne and xanthum gum. Turn on food processor until combined and finely ground. It will look like coarse meal.
Add the wet ingredients and process until the dough is sticky and not crumbly. Add extra water until it forms a dough and isn’t crumbly.
Scoop 2-3 Tablespoons of dough onto a parchment lined sheet tray. Press the dough flat with your finger tips using quinoa flour or tapioca starch or potato flour to keep your fingers from sticking until they are flattened and about the diameter of a pita.
Cook in a 400ยบ oven for 18 minutes.
