So Easy! Gluten Free Mini Chocolate Banana Muffins
3 large ripe bananas
1 cup sugar
3 eggs
4 tablespoons butter or butter alternative***
1.5 cups all purpose GF flour
1 teaspoon salt
1 teaspoon baking soda
1/2-1 cup chocolate chips
Preheat to 325, grease 9×5 loaf pan.
Mash bananas — you should have 1 cup, beat in sugar, egg, butter. Mix in dry ingredients. Stir until combined. Then add chocolate chips. Scoop into mini muffin tray lined with paper liners. I like to use mini ice cream scoop. Bake for 15 minutes and check for doneness. Serve with powdered sugar.
***I used 1 Tablespoon Soy Free Earth Balance and 3 Tablespoons Spectrum Organic Non-Hydrogenated Shortening
Anonymous - These muffins were easy to make and very tasty. I added some walnuts to the mix which added a bit more texture.
Anonymous - These are the best muffins and they had a good texture. Even my picky husband didn't think they were gluten free. I used only 1 cup all purpose GF flour and 1/2 cup coconut flour. I also used Ideal for the sugar and 4 bananas. Can't go wrong with this recipe.
