No Chill Sugar Cookies (Gluten Free/Casein Free)

This recipe is from my friend Jill who made these gluten free cookies for my daughter’s class this year. The original recipe calls for 5 cups of flour. She substituted gluten free flour and xanthum gum so that they were gluten free cookies.

2 c. sugar
1.5 c. organic palm shortening
1 T. vinegar
1 tsp vanilla
4 eggs
5 c. gluten free flour
1 T. xanthum gum
1/2 tsp salt
1 T. baking soda
Cream sugar and shortening together until smooth. Add vanilla, eggs and vinegar. Mix well. Add dry ingredients and mix well. Bake at 375ยบ for 8-10 minutes.

  • Kylee - I have a question. Did she use a Xanthan Gum that was not derived of wheat or lactose? Otherwise how can you be sure they are gf/cf? I don't know much about the whole gf/cf thing… my daughter was just diagnosed as sensitive to both.. so I'm still learning.ReplyCancel
