Homemade Gluten Free Ice Cream Cake

I don’t really have a recipe for this cake. You can kind of wing it with an ice cream cake. Baking is a science and you need to get it right, but making an ice cream cake is more art than science. I used several cartons of ice cream for this cake. We used Ben & Jerry’s (because they use non rGBH milk in their ice cream) vanilla and Phish Food which is chocolate. The bottom layer was strawberry and then I crushed up some oreo style Jo-sef gluten- free chocolate sandwich cookies for the middle. I made a frosting with tons of powdered sugar and butter and a little coconut milk. It was a once a year dairy indulgence. Usually our whole house is dairy free. I can’t remember the last time I had a carton of milk in our fridge. But it was my daughters birthday and her sensitivity to dairy has vanished since we figured out her thyroid issue. Which to me, was another huge reason to celebrate. I did celebrate–in a big, big way with this tiered ice cream cake which was decorated with monogrammed M&Ms.

To make the cake I lined a springform cheesecake pan with parchment paper. Then I scooped softened strawberry ice cream into the lined pan. After smoothing the strawberry ice cream out, I put it back in the freezer to harden. A few hours later, I sprinkled crushed oreos and put a layer of vanilla frosting over the crushed cookies. The top layer was half vanilla and half chocolate Phish Food ice cream. I returned the cake pan in the freezer for several hours to harden again. When I took it out of the freezer, I ran a knife around the edge of the pan to loosen it before opening the springform pan to remove the sides of the cake pan. Then I turned it onto a serving plate. Once again, I returned the cake to the freezer to harden before icing the frosting with a buttercream frosting and decorating with monogrammed M&Ms. The process might have been easier if I had done some research on making ice cream cakes…so here is an about.com video which shows the basic process of making an ice cream cake.
