Sunday Brunch: Gluten Free Waffle Sundaes with Whipped “Cream” and Strawberries

Sunday mornings I often make homemade waffles with tons of toppings. My homemade waffle recipe only has two tablespoons of sugar so I don’t mind if the kids make waffle sundae’s using whipped cream and fruit. My daughter has regular whipped cream on her waffles–and I serve soy whip or rice whip for my son who can’t eat dairy. Pile cut strawberries on top of the waffles and then put whipped cream and a whole strawberry for an easy and exciting breakfast treat for kids.
After breakfast, I freeze the extra waffles in a single layer on a sheet tray. When the waffles are frozen, I transfer them into plastic ziplock bags and place them back in the freezer so we can enjoy waffles during the week.
