Mark’s Gluten Free Potato Latkes

Mark’s gluten free potato latkes are super easy to make and delicious to eat. I don’t peel the because all the nutrients are in the skin of the potatoes–once they are fried you don’t even notice whether they are peeled or not.

Ingredients:

-about 4-6 potatoes (about 2.5 pounds)–peeled or just cleaned
-half of a large white onion-grated
-2 eggs
-1 tbs of salt – actually a little less
-3 tbs of rice flour

Directions:

Hand grated the potatoes or use a Cuisinart with a grater attachment. Grate half of a large white onion. Mix together with eggs, salt and rice flour. Cook in in hot oil. Mark used refined coconut oil and it was actually very good. I like to use 1/2 olive oil, 1/2 coconut oil. Make sure to cook when oil is hot and flatten in the pan until crispy.

For those not affected by dairy top with sour cream and sugar–Mark’s personal favorite. For those who are dairy free – top with apple sauce.
