GFCF Meatball Recipe

I haven’t been posting as often as would like to because I have been taking an algebra class. HOW CRAZY IS THAT? To go back to school to study nutrition I need a bunch of science classes and in order to do well in the science classes I decided to brush up on my math. Because I took AP calculus in high school, I thought that college algebra would be an easy class. But, it’s surprisingly hard to do algebra 20 years later and taking up a lot more of my time than I expected.

After the first day, thinking out loud, I said: “It’s too hard. Should I drop the class?” My 9 year old replied…”When something is hard for me, are you going to let me drop the class?”

So I have stuck with my algebra class. Tomorrow is our first quiz.

I did cook a celebratory Valentine’s dinner for friends tonight: Veggies with Green Dip, Pizza. Kale. Meatballs. Raspberries with Passionate Mango Sorbet. The meatballs were outstanding but I am too tired to blog anymore so here is the recipe…

Meatball Recipe

2 # organic beef and pork
3 slices of udi’s bread ground into bread crumbs
1.5 small onions (about 1 cup) chopped finely minced in cuisinart
1.5 tsp salt
2 teaspoons of dried oregano
1/4 tsp red pepper flakes
black pepper
2 eggs

Combine all ingredients. form small balls. drop into sauce and boil for 20 minutes. enjoy over boiled kale or pasta. I used a small ice cream scooper to make the meat balls.
