Easy Fried Rice Recipe

This was my “go to” recipe when my son was sick. I used garlic and onions which are antifungal and antibacterial and diced them finely so he just thought of it as rice. I don’t make it as much any more, but he was really excited for it tonight. Although he is usually soy free, he is reacting less to things thanks to Geri Brewster’s biofilm protocol, so I even let him have the gluten free soy sauce.

2 Tablespoons oil
2 scallions-chopped on an angle
2 eggs
4 cups rice
½-1 tsp salt
¼ tsp white pepper
1 tsp sugar/agave
1-2 T. soy sauce

*optional:
veggies: ½ c cup peas,1/2 c. carrots, ½ c. celery chopped into small cubes
½ cup shrimp cut into ¼ inch dice
ham or pork-cut in ¼ inch dice

Heat oil in wok or large frying pan.
Add scallions to hot oil and cook one minute.
Add carrots, cook until soft (2 to 3 minutes)
*(Add shrimp and cook 1 minute
Add eggs stir to break up.
Then add rice right away. “Gold wrapped in silver” the cooking instructor says on the YouTube video of making Shanghai Fried Rice.
Next, add quick cooking vegetables and cooked meets (peas, celery, ham etc. .)
Then add seasoning: kosher salt, sugar/agave to balance, white pepper, oyster sauce or gluten free soy sauce.

Makes enough for 4.
