I make a baked pancake that is just wonderful, but is not gluten free. Not sure how it would fluff up with gluten free flour, however, I have used raw goat's milk instead of raw cow's milk and once it is baked you don't taste any difference or goaty aftertaste. Amazing! Heat over to 400 degrees and place pie plate w/1-2TBS butter in it. Heat until bubbly and melted; cover entire pan with butter. Add the following mixed ingredients to the pan and bake about 10-12 minutes. Be sure to only mix the ingredients and it is fine if it is lumpy as it should be. 2 eggs; 1/2 cup flour; 1/2 cup milk. Enjoy!!

I love your blog! Having just started a GFCF diet for our son (and the whole family in support of him) it's great to read about your family. We just had your pancakes for a late breakfast, and I'm off to buy chicken breasts now to make your Shake n Bake for dinner tonight! Thanks for sharing these with us! The McCrindles, from Scotland
